Khabees or Khabeesa is one of the popular dessert dishes in the Kingdom of Saudi Arabia and some Gulf Cooperation Council (GCC) countries. Its history dates back to the era of the First Saudi State, and the Eastern Province is distinguished by this dish, considered one of its popular dishes as part of the Ramadan Iftar tables.

Khabees dish is known as a type of dessert, consisting of a mixture of pitted dates, sheep ghee, flour, and milk.

Khabees ingredients

Khabees is made from four cups of whole wheat flour, one and a half cups of sugar, lemon, one cup of ghee, a spoon of saffron, a spoon of cardamom, and half a cup of rosewater, in addition to three cups of water.

To prepare the Khabees dish, sugar and lemon are heated on the stove along with a cup of water until it boils and turns brown. Next, the remaining water is added, and the heat is reduced. Cardamom, saffron, rosewater, and ghee are stirred in. Meanwhile, flour is toasted until fragrant, then set aside. In the pot, a well is formed in the center of the flour, and the caramelized sugar mixture with cardamom, saffron, and ghee is swiftly poured in, thoroughly mixed, and returned to the stove.
