Thirteen food items from the Kingdom of Saudi Arabia were registered by the Culinary Arts Commission on the "Ark of Taste" list of the Slow Food Foundation for foods facing extinction on September 22, 2022. This initiative aims to preserve the historical heritage of culinary arts in the Kingdom, revive these food items, and ensure their preservation. The items are categorized based on the provinces of the Kingdom:
Riyadh Province: al-Qasab Salt.
Makkah al-Mukarramah Province: al-Kabath (Prophet Fruit), historically known in the northern and southern parts of Makkah al-Mukarramah Province.
Al-Madinah al-Munawwarah Province: al-Burr al-Najrani (Najrani wheat) (al-Samma) and al-Hellya Dates.
Al-Bahah Province: Saudi Khawlani Coffee, Mountain Sidr Honey, and Kadi Plant (Pandanus tectorius).
Al-Jawf Province: Hassawi Rice and al-Samh Seeds.
Northern Borders Province: al-Kamaa (white desert truffle) and the traditional dish "Ghafaisah."
Qassim Province: Maghmi (Maghmi Dates), a traditional Saudi dish made from dates, molasses, and sesame seeds.
Hail Province: Red Camels, distinguished by their medium size and low milk production, their meat is used in rice dishes served on special occasions.
Tabuk Province: al-Yusr Tree (Moringa Trees).
