Mafroukeh is a traditional dish in the Kingdom of Saudi Arabia, precisely in Tabuk Province, northwest of the Kingdom. Mafroukeh consists of dates, whole-wheat flour, honey, and ghee. It is prepared by kneading whole-wheat flour and forming it into a disc shape that is buried under embers, hence named Jamriya (ember bread). After it is baked, the bread is cut into small pieces, and dates or honey with wild ghee are added. This recipe’s ingredients are rubbed with the hand, hence the name Mafroukeh (from the verb to rub).
